If I'm ever feeling like I want something refreshing to eat with spicy or oily food, this is definitely #MyGoTo kimchi – Spicy Sesame Cucumbers! It's crunchy and fresh, but has a flavourful sesame sauce. Super addictive, trust me!!

This recipe enough for 2-3 pax, and keeps in the fridge for 1 week.

• 2 cucumbers (i prefer the thin japanese kind, sliced thinly)

• 1/4 cup light soy sauce

• 2 tbsp sesame oil

• 1 tsp minced garlic (optional)

• 1 tbsp sesame seeds

• 2 tbsp gochugaru (korean pepper flakes)

• 2 tbsp mirin

🥒 Slice your cucumbers thinly, soak them in salt and water for 30 minutes before rinsing them in cold water! This gets rid of that weird green leafy flavour yet retains their crunch!

🥒 Mix the sauce ingredients thoroughly, and store in a container overnight, shaking it to mix the sauce and veg every few hours. It's best eaten 1-2 days later!
