It's yet another rainy day, so it's time for another stew recipe! I've made this stew a little spicy but feel free to omit the spice here!! It's super versatile and hearty, so it's good for any and every occasion 👌🏻

Makes 3-4 servings:

• 2 full chicken breasts (halved, so 4 fillets of breast total) - i seasoned this with all purpose seasoning, but you can totally just salt and pepper this!

• 2 tbsp minced garlic

• 1 tbsp butter

• 10+ cherry tomatoes (halved)

• 2 tbsp tomato paste

• 2 tbsp tomato sauce

• 1 tsp sweet paprika (non spicy)

• 2 tsp chilli flakes (optional)

• 1/2 tsp black pepper

• 1 tsp sugar

• 1 mozzarella ball (cut into smaller cubes)

• 1/3 cup beef stock

• 1/4 cup cream

• seasoning & garnish: black pepper, chilli flakes, chopped parsley

🍗 Fry chicken fillets in around 2 tbsp of neutral or olive oil, 3-4 mins on each side depending on the thickness. When they're browned on both sides, take them off the pan and set aside for later.

🍅 In the same pan, add butter, garlic, tomato paste and cherry tomatoes. Fry for 2-3 minutes until tomato paste is cooked through and is lightly browned. Scrape all the delish chicken brown bits too! Then, add tomato sauce and stir till heated through.

🍖 Stir in beef stock and cream, and let simmer. Add sugar if you think the broth is too acidic!

🥘 Put the chicken back in, and place mozarella balls around the pot to melt. Simmer on med-low heat till chicken is done.

🍛... and serve! I ate this by itself with no carbs but you can serve it with pasta, quinoa or some potatoes too, they're so good with the sauce!! Hope you can say that it's "#MyGoTo " recipe once you've tried it!!
