Lu has officially hit the “toddler stage” and is like a whole new baby. It’s so funny seeing her act like a proper little human now but Mum is tired 🙃 Hope everyone is doing well!

What you’ll need:

- 3 oz each of sweet & white potatoes (I used 2 medium sized for each)

- .5lb of salmon (skinned, deboned & cooked)

- 1 tbsp chopped chives

- Garlic to your liking

- 1 egg

- 1/4 cup flour

- 1/2 cup breadcrumbs

How to:

1) Peel, dice and boil the potatoes until soft. When cooked, drain, mash & set aside.

2) Cook salmon desired way. (I love the air fryer for this! 370 for 12ish minutes)

3) Shred the salmon once cooked

4) In a bowl, add in mashed potatoes, salmon, chives, garlic, flour & egg. Give it a good mix.

5) Spoon a heaping tablespoon of the salmon mixture in your hand. Roll into a ball.

6) Drop the ball into the separate bowl of bread crumbs. Make sure to fully coat it!

7) Gently flatten the ball into a thick patty with your palm. (Damp hands help here)

8 ) In a frying pan, add preferred oil or spray. 9) Over medium-high heat, place each patty on the pan. Cook on each until golden brown.

🥡 Stores in the fridge for 1 day

🔥 To reheat, defrost a bit beforehand. Bake in over or air fryer on 400*f until piping hot inside.

❄️ Freeze for up for 2 months.
