These are my favorite cozy fall meals. All of them are great to batch cook too so you can cook once and enjoy twice (or more!) 😊
1. Tomato basil gnocchi
Ingredients include - olive oil, onion, garlic, cherry tomato cans, balsamic vinegar, maple syrup, vegetable stock cube, basil, spinach, green lentils, gnocchi, red chilli flakes, salt & pepper
2. Creamy cajun orzo
Ingredients include - red onion, bell peppers, grape tomatoes, garlic, cajun spice, oregano, cashews, tomato paste, almond milk, nutritional yeast, orzo, fresh basil, spinach
3. Garlic cashew pasta
Ingredients include - pasta, broccoli, zucchini, peas, cashews, garlic, salt & pepper, olive oil, red pepper flakes, nutritional yeast, lemon juice, plant based milk, onion
4. Sweet potato peanut curry
Ingredients include - sweet potato, onion, bell pepper, garlic, fire roasted tomatoes, lite coconut milk, sriracha, peanut butter, red curry paste, brown sugar, ginger, chickpeas, baby spinach, salt
