These are the BEST plant based meatballs!!! Make a batch and eat them throughout the week. Plus theyre minimal effort.

I love knowing exactly what’s in my food, and as a vegetarian, the fake meats in grocery stores are super processed and don’t make me feel the best after eating them. So I love to make recipes such as this one. If you like tofu you’ll love these. I hope you enjoy as much as I do!!

Here’s the details, makes roughly 18 meatballs:

-1 block firm tofu, crumbled

-1 small, finely diced onion

-a handful cilantro, chopped

-a handful mint, chopped

-a tbsp piece of ginger, chopped

-2 heaping tbsp tomato paste

-5 tbsp flour (chickpea flour for the gf version)

-1 tsp garlic powder

-salt and pepper to taste (I used 1 tsp salt, 1/2 tsp pepper)

TIP: Really make sure your tofu has been pressed well, don’t be lazy with it (I made this mistake), the less, liquid the better

All you need to do is mash the ingredients in a mixing bowl and combine. Then shape into 15-18 balls. Fry in oil until golden brown and then bake at 375°F for 20 minutes!

I paired mine with pasta and marinara sauce but you can enjoy them however you’d like. They can store in the freeze for up to 3 months.
