Pimento season is here!

It's pimento season! Pimento Cheese is a Southern staple by way of 1870's New York. For my non-Southern friends, it's not a dip to be eaten on crackers & veggies. It's a sandwich spread, though it took some time to convince me of that fact. It never occurred to my spouse that it could be eaten as anything other than a sandwich until he met me, though he has since learned that it is really good on crackers. I prepared some last night using pimentos I bought at the Farmers Market Saturday. All you need is some chips & fresh iced tea for a delicious Southern meal.
