Rookie Dinner Meals Episode 1

So I've been on a health journey lately after finding out that I have subclinical Hyperthyroidism, I'm lucky that my symptoms aren't really that bad, but I decided that I really needed to do better for my body, first step, eating better.

So I found this recipe, thanks to the lovely people of The Plant Based School, and decided to give this a good college try!

I don't consider myself vegan at all, but I do like some vegan foods, and I've been working on incorporating more vegetables to my diet and I'm honestly surprised that I enjoy Lentils...I'm a huge picky eater but maybe because I'm making these for myself it's giving me more a push to try new stuff that I normally would have never done.
