Cheesy beef enchiladas

When it comes to enchiladas one can use their imagination on what to use as ingredients. Just use what you like, experiment.

These are not traditional but delicious.

Fried my tortillas only to a softened state using vegetable oil. A few seconds.

I used ground beef cooked as usual and added my taco seasoning.

Used black beans that I also seasoned.

Monterey Jack cheese piece in each

Corn from can.

Wrapped each and placed on glass dish

Used taco sauce instead and of enchilada sauce

Poured lightly on top and added a mixed Mexican cheese.

Covered and cooked for 20 min at 365 degrees

Uncovered them and cooked for 7 more min.
