One of my favorite meals is ropa vieja. It’s so flavorful and honestly so easy to make. Today I did an easy crock pot version! I started by prepping my meat. I know there’s a debate on whether to or not to rinse your meat but I do.
Meat prep:
Place roast into bowl with water with vinegar and juice of lime or lemon. I let it sit a few minutes then I pour the water mixture out. I then pat my roast dry with a paper towel. I like to begin by placing 1 in slit into the roast to allow for the seasoning to penetrate inside the roast especially if it’s big. I use a 3.71 lb roast
Marinade:
I start by adding my sofrito and my favorite seasonings: garlic, onion powder, sazón, adobo, sazón total complete seasoning, paprika, Dominican oregano, thyme, basil, and roasted garlic powder. I then let it sit. Preferably overnight but at least for an hour.
Veggies:
I used 1 onion, Spanish olives, red bell pepper, green bell pepper, and orange bell pepper. I later added cilantro and yellow potatoes.
Crockpot prep:
I added all my veggies to the crock pot along with 2 cans tomato sauce, more sofrito, and more of the seasonings from above. I then added my roast along with enough broth/water to cover. Added a little (about 3 tbsp) of vinegar to help tenderize. Covered and let slow cook on low. After about 5 hours I added carrots, potatoes, and cilantro. Covered again and allowed to cook until tenderness desired was reached. Roast should shred easily.
