Orange Chicken, Lo Mein and Broccoli 馃敟
Orange Sauce
juice of 2 large oranges + the zest from 1 orange
1/4 cup sugar
3 tbsps rice vinegar
6 tbsps soy sauce
4 large garlic cloves, minced
1.5" knob of ginger, grated
splash of shaoxing wine
pinch of red pepper flakes
cornstarch slurry (2 tbsps water + 1 tbsp cornstarch)
Chicken
2lbs chicken thighs, cut into 1" cubes
1 egg
Salt + black pepper
Fat pinch of msg
1 cup corn starch
1/2 cup all purpose flour
Oil to fry
Garnishes - green onion & sesame seeds
Sauce Instructions
In a medium saucepan, combine sugar, rice vinegar, soy sauce, zest and juice of an orange. Whisk together and bring to a boil over high heat.
Reduce to medium heat once boiling, let simmer for 8-10 mins. (I give it a splash of shaoxing wine here)
Mix slurry together, add to the sauce and stir. Let simmer for a few mins until thickened.
Add grated garlic, ginger, and red pepper flakes. Taste to season to your liking
Chicken Instructions
Season chicken thighs with salt & msg.
In a medium size bowl, whisk together cornstarch and all-purpose flour.
Separate bowl, whisk together the eggs with a splash of water.
Toss the chicken pieces into the flour mixture then egg mixture, and then back into the flour mixture. Place to the side and rinse and repeat.
Fill a heavy bottom pot with fry oil of your choice. About 2-3" deep. Heat to 375F.
Fry chicken in batches for 3-5 mins. Cool on wire rack.
Toss chicken in orange sauce in a mixing bowl.
