This was just unbelievably easy to make!! Best thing I’ve done tonight 🥣

I’ve always loved my comfort food and we always find that in warm and hearty soups like sundubu jjigae, or the iconic Korean soft tofu soup. Cooking meals for 1-2 pax means if I could reduce the amount of washing, I would.

So why not get a Korean dolsot ceramic pot! I finally got my hands on this one that I got from Taobao for about ~$8! It worked so well over the stove, keeps your food warm for a longer period, and this size is perfect for 2 pax!

I used the soup packet that i got from a recent trip to Seoul, and voila it tastes just like what you get outside, at a fraction of the cost of course!

I was inspired to cook this tonight because I had leftover mushrooms, I got my pot, and I got my soup paste from Korea, so why not? This cost about <$10 to make, and the best part was, you throw everything inside one pot and only clean one pot after! Because of this, the whole prep and cook time took only about 15-20 minutes, my rice wasn’t even ready by then 😂😂

So here’s what I did:

Ingredients 🐖🧅🍄‍🟫🧄

- Pork pieces (used frozen pork slices)

- 1 bunch spring onion (chopped)

- Mushrooms (sliced)

- 3 cloves garlic (minced)

- 1 tbsp sesame oil

- 1 onion (chopped)

- 1 tub/tube soft tofu

- 1 egg

- Salt and pepper (to taste)

- Kimchi (as side dish)

Instructions 👩‍🍳

1. Heat sesame oil in a dolsot pot over medium heat.

2. Sauté garlic and onion until fragrant.

3. Add mushroom and pork pieces and cook until browned.

4. Pour in the soup paste and water to cover the ingredients and bring to a boil.

5. Reduce heat and add soft tofu. Gently stir.

6. Simmer for 5-10 minutes, then season with salt and pepper.

7. Crack an egg into the stew and let it poach for 2-3 minutes.

8. Garnish with chopped spring onion before serving.

9. Enjoy with a side of kimchi and hot steaming rice! 🍲🍚🥢
