Sucker for some good Chinese? I found just the reciepe for you! This Orange Chicken has all the flavor without the Gluten and Dairy!
What you’ll need👇🏻
For the Chicken:
2 lb boneless skinless chicken thighs cut into 1" pieces
3/4 cup tapioca flour
1 tsp salt
1/2 tsp black pepper
2 eggs whisked
Avocado Oil or Olive Oil
For the Orange Sauce🍊
2/3 cup water warmed slightly
4 medjool dates pitted or 1 1/2 cups dates chopped
1/3 cup fresh orange juice
2 Tbsp rice vinegar
3 Tbsp Tamari or coconut aminos
1 tsp ground Ginger
1 tsp garlic powder
1/2 tsp crushed red pepper flakes
1 1/2 tsp tapioca flour + 1 tbsp water (makes a paste)
Zest from 1 orange
What to do👇🏻
1️⃣ In a blender take dates and water and blend until a paste is made. Scrape blender completely and set aside.
2️⃣ In a sauce pan, take date paste, rice vinegar, tamari, ginger, garlic, red pepper flakes and orange juice. Stir/whisk together and let simmer for 3 minutes.
3️⃣ In a small bowl, whisk the 1 tsp of arrowroot with 1 Tablespoon of water to form a paste. Add this to the orange sauce and whisk well. Raise the heat back to medium and Cook for another 4 minutes until the mixture thickens and reduces a bit (it should resemble caramel). Once the sauce is thickened, remove from heat and stir in the orange zest. Set aside.
4️⃣ For the Chicken: Take raw chicken and slice into 1 inch cubes. Set aside
5️⃣ In a medium mixing bowl take tapioca flour and in a another medium mixing bowl whisk eggs. Take chicken pieces and dip into eggs, then flour mixture.
6️⃣Once your chicken pieces are completely coated in tapioca flour add to a large skillet lined with avocado oil. Cook each chicken pieces since for 3-4 minutes or until crispy.
7️⃣Once complete add sauce back into pan and toss.
You can serve over cauliflower rice and broccoli. Add green onion for garnish!
