This corn chowder is ready in an hour and is amazing for the whole family or to take to potlucks in a crock pot- we always pair ours with a simple BLT
Ingredients-
2 tablespoons of butter
1 chopped onion
1 thinly sliced zucchini
3 thinly sliced medium potatoes
2 bags of frozen corn
4 cups of chicken stock
2 Garlic cloves
As much thyme, smoked paprika, pepper, salt, garlic powder as your heart desires
1 cup heavy cream
Directions-
Add butter to a soup pot to melt
Add in your chopped onions and zucchini and let cook until translucent and fragrant (7-10 mins)
Next add your potatoes, corn, & chicken stock. Let that come to a simmer and cook about 25 mins or until potatoes are cooked
Now add all your spices
Once that’s all cooked take half of the soup out and put into a large bowl and use an immersion blender to blend or use a blender to blend that half of your soup
Take blended soup and add it back to your original soup and add heavy cream
& that’s it you’ve made an amazing corn chowder!
