Ingredients:

- 1/4 cup of melted coconut oil

- 1/3 cup of maple syrup

- 1/3 cup of almond butter or peanut butter

- 1 egg (room temperature, don't make the mistake I did lol)

- 1 tsp of vanilla extract

- 1/3 cup of protein powder (I use Equip unflavored, which is high-quality grass-fed protein isolate)

- 1 cup of gluten-free 1-to-1 baking flour

- 1 tsp of baking soda

- 2/3 cup of chocolate chips (I used minis)

Instructions:

1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.

2. In a mixing bowl, combine the melted coconut oil, maple syrup, almond butter, egg, and vanilla extract. Stir until combined.

3. Add the dry ingredients: protein powder, gluten-free baking flour, and baking soda. Stir until combined with the wet ingredients.

4. Fold in the chocolate chips.

5. Roll the dough into balls and place them on the baking sheet.

6. Bake for about 13-17 minutes, depending on how thick you make the cookies. The bottoms will turn slightly brown when they are done.

7. Enjoy your protein-packed, gut-friendly, gluten-free chocolate chip cookies!
