Chimichurri Shrimp Skewers
Using the grill as much as possible before it’s too late!
Ingredients for 4 skewers
1 lb jumbo shrimp
3 Tbsp olive oil
1 lemon juiced
1/2 tsp cayenne pepper
1 tsp cumin
1 tsp paprika
2 garlic cloves minced
Pinch of salt
Coat the shrimp and set aside for 5-10 minutes
Chimichurri ingredients
1/3 C olive oil
3 Tbsp red wine vinegar
1/4 C cilantro
1/3 C parsley
2 cloves garlic minced
1 Serrano pepper finely diced
1 shallot minced
1 tsp cumin
1 tsp oregano
Pinch of salt
Pinch of red pepper flakes
Directions
Make the Chimichurri and set aside. Add the shrimp to the marinade with and only let it soak in for 5-10 minutes. (Too long will make the shrimp tough and rubbery)
Lay the shrimp on an angle on the grill grates, this will help prevent them from getting stuck in between the grates. Grill for about 3 minutes each side or until no longer opaque.
Serve with the Chimichurri and some cilantro lime rice.
This dish is can be paired with a rose wine.
