Easy Healthy Food Recipe: Chickpea Cabbage Salad

I’m the type that loves a quick meal because my days are so busy that I want to spend the least amount of time possible preparing food. This recipe has so many colors, veggies and an added bonus of protein from the chickpeas to help make it more filling.

If you plan to meal prep I would make a huge bowl of it and then pack a small container of dressing so that it does not get soggy.

Here’s what you need:

Red Cabbage

Avocado

Red Onion

1tbs Vinegar

Italian Salad Dressing

Cherry Tomatoes

Salt

Pepper

Chickpeas

Here are the directions:

Cut all the veggies

Add salt, pepper, vinegar

Mix it up!

Finish off with dressing

Mix it again!

THATS IT! So easy, so filly, so yummy.
