SWEET POTATO PIE COOKIES 🍂🥧🍪

It’s about that time of year! Even though it’s still hot AF in Texas, fall is around the corner & I’m getting prepared. If you don’t know, I run a home bakery & this week I’ve been practicing on my fall menu items. Last year I did a sweet potato cupcake but to be honest, I wasn’t a big fan of the texture. I still wanted a sweet potato item this year, so I decided on a sweet potato pie/casserole cookie! Now I must say I have some tweaking to do to the recipe before I add them to the menu.
