Itβs been a while, but Iβm finally back with another delicious recipe! This was inspired by a dessert that I had on a recent vacation. While me & my friend were eating it we both were like I need to remake this ! & thatβs exactly what I did, but with my own twist per usual. Itβs light, refreshing & perfect for these astronomical heat temperatures. Iβm in Texas & when I tell you it has been HOT AF!!! Literally the perfect cool down treat thatβs somewhat healthy (especially depending on the sugar/sweetener you use).
If you donβt have an ice cream maker, youβll get a similar effect if you freeze the watermelon first & then blend everything together. After looking at some videos on TikTok it looks like youβll get the same texture, & youβll still get the refreshing flavors !
Ingredients:
πwatermelon
πorganic cane sugar
πwater
πbasil leaves
πmint leaves
πlimes (optional)
Directions:
1. Prepare the simple syrup by combining equal parts sugar and water (e.g., 1.5 cups) with basil and mint leaves in a saucepan. Simmer over low heat until the sugar dissolves. Remove from heat and let the mint and basil steep in the syrup for at least an hour.
2. Once the simple syrup has cooled, blend watermelon in a blender until it becomes juice. Strain the juice through a sieve to ensure a smooth texture.
3. In a container, combine the simple syrup, watermelon juice, and the juice of 2-3 limes. Refrigerate overnight.
4. When ready to make the sorbet, pour the mixture into an ice cream maker and churn for 15-20 minutes or until it reaches a slushy consistency. Enjoy your refreshing sorbet!
Note: my specific measurements were 1 2/3 cup of the watermelon/lime juice mix & 1 cup simple syrup. To me, itβs the perfect balance of flavor & not overly sweet. If you like your sorbet super sweet then feel free to add more syrup! Also you can add as much basil/mint leaves or none at all. I just wanted those herbal flavors & I wish I would have added more leaves tbh!
