Ingredients
5 oz fresh spinach leaves
24 oz all-purpose flour
1 tablespoon salt
6 oz water (more as needed)
Instructions:
1💛 Blend the spinach: In a blender or food processor, blend the blanched spinach with 6 oz of water until smooth.
2💛Mix the dough: In a large bowl, combine the flour, salt, and pureed spinach. Mix well. Gradually add more water (if needed) until a dough forms. Knead the dough for about 5 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.
3- Rest the dough: Cover the dough with a damp cloth or plastic wrap and let it rest for at least 30 minutes at room temperature.
4 💛Divide and roll: After resting, divide the dough into 8-10 equal portions. Roll each portion into a ball. Flatten each ball slightly with your hands.
5💛 Roll out the tortillas: On a lightly floured surface, roll out each ball of dough into a thin circle, about 6-8 inches in diameter.
6💛Cook the tortillas: Heat a skillet or griddle over medium-high heat. Place a rolled-out tortilla onto the hot skillet and cook for about 30-60 seconds on each side,drizzling with olive oil before flipping or until brown spots appear and the tortilla puffs slightly. Repeat with the remaining tortillas, stacking them and keeping them covered with a clean cloth to keep warm.
7💛 Serve: Serve the spinach tortillas warm with your favorite fillings or dishes.
