Recently became obsessed with fennel & I can’t stop putting it in everything. Prime example, this dreamy jammy fennel & tomato pasta.
Ingredients:
1/2 lb pasta
2 tbsp olive oil
1 shallot, thinly sliced
2 cloves garlic, minced
1 fennel bulb, thinly sliced
2 large tomatoes, chopped
1 tbsp calabrian chili paste
1/2 tsp maple syrup
2 tbsp butter
salt and pepper to taste
parmesan cheese to taste
Instructions:
Cook pasta according to package instructions, making sure to save 1/2 cup of pasta water. Meanwhile, heat oil in a large skillet over medium. Add shallot, garlic, and fennel. Cook until softened. Stir in calabrian chili paste, then add chopped tomatoes, salt, and pepper. Stir, using a wooden spoon to smush down the tomatoes a bit. Turn heat down to low, cover, and simmer until jammy. Stir in butter and maple syrup. Add cooked pasta and reserved pasta water. Stir once more, then taste to adjust seasoning. Serve topped with fresh grated parm and a sprinkle of fennel fronds.
