Making vodka sauce at home is easy, quick, and always delicious! Here’s how I do it:

Ingredients

1/2 box ditalini pasta

2 tbsp butter

2 tbsp olive oil

1 shallot, minced

3 cloves garlic, minced

1/4 tsp red pepper flakes

1/4 cup tomato paste

2 tbsp vodka

1 cup heavy cream

1/2 cup fresh grated parmesan

salt and pepper to taste

Instructions

Cook pasta according to package instructions, making sure to save 1 cup of pasta water.

Heat oil and butter in large pan over medium. Add shallot, garlic, and red pepper flakes. Cook, stirring often, until softened. Add tomato paste and a bit of salt, stirring occasionally, until tomato paste starts to darken in color.

Add vodka and cook, stirring constantly, until it has mostly evaporated. Turn heat to low and add the cream. Stir until well incorporated. Cook until sauce begins to thicken.

Stir in grated parmesan and a few grinds of pepper. Add cooked pasta and 1/4 cup of the reserved pasta water. Stir to coat pasta in sauce. If sauce is too thick, add a couple tbsp of pasta water at a time to thin it out. Taste and adjust seasoning. Serve immediately.
