I’m fully thriving in pumpkin season, so I’ll really take any excuse to put pumpkin in every single thing I eat. Case in point, these pumpkin spice overnight oats. They’re soooo easy to make — we’re talking one bowl, 6 ingredients, no cutting or chopping required. Simply mix everything up, pop it in the fridge overnight, and in the morning, you’ll have a perfectly pumpkin-y breakfast ready to be devoured.

Ingredients:
1/2 cup old fashioned oats
1/2 cup oat milk
1/2 tsp pumpkin pie spice
pinch of salt
1 tbsp maple syrup
2 tbsp pumpkin purée
Whatever toppings you want (like whipped cream, yogurt, chopped nuts, or apples)
Add oats and spices to a jar. Mix well. Add oat milk, maple syrup, and pumpkin purée. Mix again. Cover and refrigerate overnight. In the morning, give it a stir, top with whatever you like (whipped cream and nuts is yummy!) and enjoy. Serves 1.
