Broccoli Cheddar-o’s 🧀🥦🧀🥦
Easy, cheesy, and made in one pot. Here’s how to make it:
Ingredients
2 tbsp butter
1 tbsp olive oil
2 cloves garlic, minced
1 shallot, minced
1 medium carrot, shredded (about 3/4 cup shredded)
2 cups broccoli, cut into very small florets
2 cups anelli pasta
4 cups water or broth
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp garlic powder
salt to taste
1/2 cup heavy cream
2 cups shredded cheddar cheese
Melt butter and oil in a large pan over medium heat. Add shallot and garlic and cook until fragrant. Add carrot and pasta and cook for a couple minutes. Add water (or broth) and spices and bring to a boil. Turn down the heat to a simmer and cook for about 10 minutes, stirring occasionally, until most of the water is absorbed. Add broccoli, heavy cream, and cheese, stir until the cheese is melted. Continue to cook for about 5 more minutes, until pasta is al dente and sauce is thick. Serve immediately.
