Butternut Squash Soup 🍁🌱🥣
Ingredients:
1 tbsp olive oil
10 cups butternut squash, diced
1 honeycrisp apple, diced
1 yellow onion, diced
4 cloves garlic, roughly chopped
1 tsp fresh sage, finely chopped
1 tbsp fresh rosemary, finely chopped
4 cups vegetable broth
1 tsp salt
½ tsp pepper
½ cup coconut milk
Instructions:
1. Start by sautéing the garlic and onion in the olive oil over medium low heat for about 5 minutes, stirring frequently.
2. Add the butternut squash, apple, herbs and spices, stir, and sauté for an additional 5 minutes.
3. Pour in the broth, stir, cover, and cook for 15 minutes on medium heat.
4. Remove from heat, pour in the coconut milk, allow to cool slightly and use an immersion blender to blend the soup until it's creamy and smooth.
