Hi friends! 👩🏼‍🍳

I have been making this granola for about a year now and I will never go back to buying store made granola. There are so many additives and so much sugar in granola. With this recipe, I know exactly what is going into it and I can always tweak it to my preference. Feel free to add or modify however you please!

*Note: you can substitute maple syrup for the honey but IMO the granola isn’t as clumpy/bunched when you use the syrup

Ingredients:

2 Cups Oats

2 Cups chopped nuts of choice - I use 1 cup walnuts and 1 cup pecans

1 tsp Cinnamon

1/2 pumpkin pie spice - I’ll usually add in the cooler months but this is completely optional

1/4 Cup Coconut Oil

1/3 Cup Honey

1 tsp Vanilla Extract

How to:

1. Preheat oven to 300° and line a baking sheet with parchment paper

2. Put all dry ingredients into a large bowl and mix: oats, nuts, cinnamon and spices

3. In a small bowl, put 1/4 cup coconut oil and microwave for 30 seconds - 1 min or until melted.

4. Add 1/3 Cup honey to the bowl with coconut oil and microwave for another 30 seconds - 1 min. Add 1 tsp vanilla extract to this bowl and mix.

5. Pour the wet ingredients into the large bowl with the dry ingredients and mix thoroughly.

6. Empty bowl of granola onto the parchment paper lined baking sheet. Bake for 25-30 mins (or until golden) at 300°

7. Let cool completely. The granola will be able to crumble easily. Store in an airtight container.

I love my granola over some yogurt and berries and it makes my breakfast delightful. This is a lower calorie option when it comes to granola.
