Hii!! I decided to make these keto friendly mini cheesecakes because I have a sweet tooth but didn’t want to sacrifice my weight loss goals! Reminder I am not a baker and I don’t have exact measurements for all.. I listened to my ancestors 🤣🍰
Crust:
1 1/2 cups of almond flour
1/2 stick of butter
I added in cinnamon but that’s optional and I didn’t measure that out.
I didn’t do this but you can add sugar replacement if you want like swerve or monk fruit
Once that was mixed together I filled each cupcake and then smoothed with a spoon
Baked at 300 for 8min then I put in the fridge to cool while I was making the filling
Filling:
1 pack of cream cheese (8oz)
1 pack of ZERO SUGAR cheesecake mix from Jell-O brand
A couple splashes of vanilla extract
3 spoonfuls of sour cream (regular size spoon)
3 eggs
3 spoonfuls of my vanilla yogurt
i forgot to buy fruit but this a good time to add strawberries, blueberries etc if you want that
Mixed that all together with a mixer then filled up the cupcakes layering on top of the crust
I baked at 280 for 30 min!
I let them cool before putting them in the fridge for the night!! The filling tasted really good so I know they will be yummy!!!
