This eggplant is seared, glazed, and baked to perfection. It is umami, savoury, and slightly sweet, and literally melts in your mouth. It pairs perfectly with rice, so be prepared to devour a large bowl of warm rice with this addicting and flavourful dish.

INGREDIENTS

1 eggplant

1 tbsp miso

1 tsp soy sauce

1 tsp sesame oil

2 tsps honey (or any other sweeteners of choice)

½ tsp rice vinegar

1 tsp toasted sesame seeds (plus more for sprinkling)

INSTURCTIONS

1. Cut the eggplant lengthwise into half and score the flesh into a criss-cross pattern. Be careful not to cut through the skin.

2. On medium high heat, drizzle some oil and place the eggplants cut side down and sear until golden brown, about 3-4 minutes. Flip to sear the skin side and sear for another 3-4 minutes.

3. Then, flip them over to sear the flesh side again for another 2 minutes, until perfectly golden brown and soften.

4. Prepare the glaze by simply mixing everything together in a small bowl. Feel free to adjust according to taste.

5. Remove the seared eggplant from heat and brush the glaze on the flesh side. Bake in an air-fryer at 200°C for 8-10 minutes. The cooking time depends on the size of the eggplant, bigger ones take longer time to cook through and vice versa.

6. Garnish with white sesame seeds and serve hot!
