These banana oatmeal muffins are healthy, flavourful, moist, and perfectly sweet. They come together in relatively effortlessly in only a few simple steps. If you are new to baking, this recipe is definitely for you because it is fool-proof. INGREDIENTS
180g plain flour
150g rolled oats
1 ยฝ tsp baking powder
ยฝ tsp baking soda
1 tsp cinnamon powder
ยผ tsp salt
120mL milk
60mL oil
2 large eggs
70g sugar (preferably brown sugar)
1 tsp vanilla extract
300g mashed ripe banana
Optional toppings:
Banana slices
Rolled oats
Chocolate chips
INSTRUCTIONS
1. In a large bowl, whisk together flour, oats, baking powder and soda, cinnamon powder and salt.
2. In another bowl, whisk together milk, oil, sugar, eggs, and vanilla.
3. Pour the milk mixture into the dry ingredients and fold until just combined. Stir in the mashed bananas and mixed until combined.
4. Line a muffin pan with paper liners. Divide the batter among the liners (they will be very full!).
5. Top with your favourite toppings and bake in a preheated oven at 190ยฐC for 18-22 minutes or until a skewer comes out clean.
6. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack. Enjoy once cooled!
