Eggs might be one of the most difficult foods to give up on when you first started going vegan, but this tofu scramble is a legit game changer. It is so easy to make, high in protein and low-calorie, plus it can be prepared under 15 minutes with only a few simple ingredients.
If you haven’t tried tofu scramble, it really tastes a lot like real eggs. The best thing is it is cholesterol-free, has low fat content and packed with plant-based protein! INGREDIENTS
2 blocks traditional firm tofu
Black salt ¼ tsp (or more to taste)
Turmeric powder ¼ tsp
Black pepper ¼ tsp
Nutritional yeast 1 tbsp
Non-dairy milk 2 tbsps
Green onion
INSTRUCTIONS
1. Use a fork to mash the tofu into fine pieces.
2. On medium low heat, add some cooking oil into a frying pan, followed by the mashed tofu. Saute for 3-4 mins until the water from the tofu has almost evaporated.
3. Add the rest of the ingredients except for the milk and stir until combined. Cook and stir constantly for 5 mins.
4. Then, add the milk and stir to mix well. Feel free to add more milk if you prefer your tofu scramble to be on the moister side.
5. Top with chopped green onion and crack more black pepper as a final touch. Enjoy!
