Simple and Easy Cheesy Potato Casserole

I am a mother of 3 boys and they can eat. 🤣 As a working mom and wife, simplicity means everything to me. That’s why I like to find and create quick and easy meals to decrease the amount of time in the kitchen.

This is one of our favorite 30 mins or less meals. I used to add meat, but since we are transitioning to the vegetarian lifestyle, I omitted it. What are some quick and easy meals your family enjoy?

Ingredients:

Red potatoes

Bell peppers

Onions

Broccoli

Cauliflower

Carrots

Zucchini

Squash

Kale

Cheese

Recipe:

Dice the potatoes, bell peppers, and onions, and add to a pan. Add seasonings. Add 1 cup of water. Wrap with aluminum foil and bake at 350° until the potatoes are almost done. Then the vegetables of your choice and bake until the vegetables are ready. Add the cheese of your choosing and bake until the cheese melts.

You can serve this with garlic bread or a dinner roll.
