One of my favorite dinners!
Can be served over pasta, in a sandwich, or cut up over a salad! (We just eat ours on plates too)
Included a picture of each step but also included a little more detail below! Let me know if you try and make it!
Ingredients:
Thinly sliced chicken cutlets (boneless and skinless)
Fresh mozzarella cheese (not pictured)
Parmesan cheese (include with seasoning in breadcrumb mixture)
Italian breadcrumbs
Eggs
Italian seasoning
Basil
Salt
Pepper
Oil
Garlic powder
Onion powder
BIGGEST TIP:
Season everything. The chicken. The egg mixture. The breadcrumbs. All of it. Will add so much flavor!
Directions:
Melt oil and butter in pan (recommend using a deep one to fry chicken in)
While that is melting start coating your chicken in the egg mixture.
From the egg mixture you will coat your chicken in the breadcrumb mixture
ANOTHER TIP: separate bowls and forks for the egg mixture Vs the breadcrumb mixture
Fry coated chicken until golden brown and crispy
Place on drying rack to drain excess oil
Add layer of sauce and cheese to chicken
Place on oven safe rack and bake for 25 min at 350 degrees.
I made fresh marinara sauce for this recipe but jar works just fine too!
HEALTHY TIP:
If you are on a health journey and still want to enjoy this, you can always air fry or bake the chicken instead of frying! Use low fat cheese and a low sodium sauce!
