Spring Side Idea!

I recently came across this black bean salad that I was wanting to try out! It is SO quick and easy to make and can be paired with a lot of various foods. I love that it’s not a heavy food and is perfect as a side for a barbecue now that the weather’s warmed up!

The directions are simple, you simply prep all of your ingredients and mix them together, chill overnight or even a couple of hours and it’s ready to enjoy!

Ingredients:

15oz black beans

1 Red Bell Pepper, diced

15oz of corn

1 tsp salt

1/2 tsp cayenne pepper

1 Tbsp sugar

3 freshly squeezed lime juice

1tsp lime zest (zest before squeezing the limes)

1/2 c. Chopped up cilantro

Oil & vinegar dressing

(Avocado is also a great addition to it)
