I'm always looking for creative ways to make traditional Jamaican dishes without disrupting the recipe completely. I cooked some salt fish with green plantain this morning for breakfast and the twist was in the preparation of the plantain.
Ingredients:
1 package salted cod
1 tomato
1 yellow onion
1 tsp scotch bonnet sauce
1 green plantain
Instructions:
Codfish :
Boil salted cod to remove some of the salt
Remove boiled cod from stove and begin to break fish apart with hands
Sautée sliced tomato and onion in 1.5 tbsp olive oil for a couple of minutes
Add cod to pan
Mix all ingredients together and cook on low for about 8 mins
Add scotch bonnet pepper sauce and 1/2 tsp of black pepper
Plantain:
Cut plantain into 4 even pieces
Soak in salted water for about 15 mins
Remove from water and dry on paper towel
Add plantain to heated pot of vegetable oil
(Add enough oil to submerge plantain or brown on one side before rotating)
Remove plantain from oil and press in whatever way you prefer. Sometimes, I do it flat, but today, I used a lemon squeeze to create a cup like shape. #kitchenhacks
Place plantain back in oil and cook until crispy
Spoon cooked cod into plantain cups and enjoy!
