Cinco de Mayo Dinner

I had an amazing Cinco de Mayo! I decided to try the chicken tomatillo tamales from Costco, and they were absolutely delicious. The tomatillo sauce gave the chicken filling a tangy and slightly spicy flavor that was just perfect. I definitely plan on buying these tamales again.

To accompany my tamales, I made some guacamole with corn salsa mixed in. The combination was fantastic! The corn salsa added a nice texture and sweetness to the classic guacamole dip. I also picked up some mango salsa from Costco, which was a refreshing and flavorful addition to the celebration.

To complete my Cinco de Mayo meal, I had a passion fruit hibiscus margarita. This drink was the perfect balance of sweet and tangy, with the unique twist of passion fruit and hibiscus. It was the perfect accompaniment to my meal.
