INGREDIENTS:
🥣 1 pkg of bacon - cooked and chopped
🥣 1 white onion - chopped
🥣 3 sticks of celery- finely chopped
🥣 3 cups of frozen corn
🥣 1 zucchini- cubed
🥣 1 squash-cubed
🥣 5 cups of chicken broth
🥣 2 russet potatoes-peeled and cubed
🥣 1 tsp salt, pepper, cayenne pepper, garlic powder, thyme, and paprika
🥣 2 cups half and half - or milk
INSTRUCTIONS:
- In a large pot, cook bacon and chop then add back into pot
- Add onion and celery- cook for about 3 min. Add in corn and cook for additional 4 min.
- Add in chicken broth, turn up to medium high heat - once simmering add in potatoes and spices. Let simmer for 10 min. Before adding in zucchini and squash.
-Once zucchini and squash have been added cook until potatoes are tender -about 10-15 min.
- take two cups of chowder from pot and add into a blender- blend until smooth and add back into pot.
-Stir in the 2 cups of half and half or milk
Serve with bread or salad! Super easy and yummy!
