Today for dinner I’m making pernil I am 100% Puerto Rican so I gets down in the kitchen for my familia as for my dinner since I had gastric surgery I couldn’t enjoy all this lol but I love cooking #lemon8challenge
recipe
Clean with vinegar and water rinse until water is clean
Then take a knife cut the skin part peel up (not completely off)
then poke holes inside and on bottom but not the skin part you want to make that crispy
12-15 garlic cloves mashed
2/3 cups of vegetable oil
1/4 cup sofrito
Sazon ,salt, adobo,oregano, onion powder mix all that together and put on everywhere in the holes so it’ll soak up the flavor but not the top skin leave that dry
season the top skin with salt and Sazon that’s it cover it and leave overnight in fridge next day before putting in the oven pat the skin dry again and cover it.
Oven put on 330 for 4-5 hours then uncover and baste the sides not the top leave that dry so it’ll get hard
Then leave uncover then oven on 375 until skin is to your liking I do it another 2-3 hours then it’s done
