this one is so easy!!! here's all the deets
ingredients:
• 4 wild caught salmon filets
• 2 cups frozen broccoli florets
• 1 lb pressed, cubed firm tofu
• 2-3 tbsp olive or avocado oil
• 1-2 tsp salt
• 1/2 tsp black pepper
• 1 tbsp garlic powder
• 1 tbsp ground ginger
• 2 tbsp coconut aminos (optional)
• 1 cup white rice, cooked according to package instructions
preheat the oven to 400 and line a baking sheet with parchment paper.
add the 4 salmon filets, ~2 cups frozen broccoli, & 1lb pressed, cubed firm tofu to the pan.
season everything with salt, pepper, garlic powder, and ginger + olive oil. for some extra flavor, add 2 tbsp coconut aminos or soy sauce to the tofu.
toss to cover and bake for 10 mins, then remove the salmon, & bake for another 15-20 minutes.
while the sheet pan bakes, prepare your rice on the stove. let cool and refrigerate everything in air tight containers for up to 4 days!
