Boo-schetta 👻😋
I brought these to a party and they were devoured within minutes! they have a garlic-y taste that pairs with the big mozzarella slice so nicely.
the mozzarella also keeps the mixture together, so it's less messy than your typical bruschetta!
RECIPE:
(takes about 20 minutes from start to finish!)
What you need:
1. baguette
2. 2 tomatoes
3. 1 onion
4. italian parsley
5. minced garlic (i got the one marinated in olive oil)
6. sliced mozzarella
7. a ghost-shaped cookie cutter
8. balsamic vinegar
What I used in my kitchen already:
1. air fryer (but you can also use an oven or toaster oven! i only used it to toast the bread)
2. a chop stick (you can also use a toothpick, it was to draw the eyes on)
3. salt & pepper
How to make it:
1. slice up your baguette into little bruschetta-sized pieces and toast them (not too much - the baguette is likely already hard. i toasted for 2 minutes on 390 degrees)
2. dice up the tomatoes and the onion. go easy on the onion - i only used half of one. the focus here is on the tomatoes 🤌🏼
3. add a full (teaspoon) scoop of the minced garlic to the tomato/onion mixture
4. dice up about 4 sticks of these small italian parsley pieces and add that to the mixture.
5. add salt and pepper to the mixture!
6. add a scoop of the mixture to each piece of bread.
7. take out your sliced mozzarella and use the ghost cookie cutter to make them ghost-shaped.
8. lay them on top of each bruschetta piece!
9. dip your chopstick or toothpick into the balsamic vinegar and dot on the eyes. because the texture is liquid-y, you might dab 2-3 times.
10. refrigerate or serve! 👻
