Gf Vegan Banana Muffins

I’m not normally a vegan baker but my best friends daughter just recently tested positive for egg and gluten allergies. So, I wanted to try to create something she would love and these banana muffins hit the spot. The key to those fluffy tops is to fill those muffin tins as full as possible, leaving an empty space between each muffin so they can *poof*! I know that goes against everything you’ve probably been told but trust me, it works! Let me know if you try them and what you think.
