If you've never tried zucchini bread, you're probably a little hesitant to try. I mean why put zucchini in a loaf right? I totally get it. If you have tried zucchini bread, then you know it's one of the best kinds of loafs out there. Trust me. Details ⬇️

INGREDIENTS

- 2 zucchinis, grated (about 1.5-2 cups)

- 2 cups sugar

- 1 cup vegetable oil

- 3 eggs

- 1 tbsp vanilla extract

- 3 cups flour

- 1 tsp baking soda

- 1 tsp baking powder

- 1 tsp salt

- 1 1/2 tbsp cinnamon

- Optional: chocolate chips or nuts

METHOD

1. Preheat your oven to 350 degrees. Prepare a 13x5 loaf pan (2 quarts) with parchment paper and butter. Note: you can also use two smaller loaf pans, baking time may vary.

2. Grate your zucchini in a large bowl and use paper towels to dry up some of the excess water.

3. In the same bowl, add the sugar, oil, eggs and vanilla. Beat until fully combined.

4. To the wet mixture, add in flour, baking soda, baking powder, salt and cinnamon. Beat until fully combined again. Fold in optional nuts or chocolate at this point.

5. Pour batter into the prepared loaf pan and bake for about 1 hour, or until a toothpick comes out dry. Serve warm with butter & enjoy!
