Copycat air fryer filet-o-fish sandwich

Let’s make it even better, at home, in the air fryer!

•2 large cod or halibut filets

•2 buns of choice

•2 slices of cheddar cheese

•1 cup panko breadcrumbs

[batter]

•1 egg

•1 tbsp mayo

•1 tbsp dijon mustard

•1 tbsp gf flour

•1/2 tsp salt

[tartar sauce]

•1/2 cup mayo

•1 tbsp pickles, chopped

•1 tsp parsley, chopped

•1 tsp capers, chopped

•Juice of 1/2 a lemon

•1/2 tsp salt

1️⃣ Mix the tartar sauce ingredients together in a bowl & set aside.

2️⃣ Toast the breadcrumbs in a skillet for 3 mins until golden.

3️⃣ Dip the fish into the batter, then in the toasted breadcrumbs, making sure the breadcrumbs really stick on the batter.

4️⃣ Spray the filets with avocado oil on both sides, air fry at 350F for 8 min.

5️⃣ Finish by serving the fish on the toasted bun, with a slice of cheese & tartar sauce!
