Here’s a quick take on a simple springy risotto using a few ingredients and Luke’s lobster in the frozen section of Whole Foods! 🦞

INGREDIENTS—

2 tablespoons ghee butter or olive oil

4-5 garlic cloves (or more), sliced

½ cup Arborio rice, rinsed dry

1 cup water or vegetable broth

1 tablespoon fresh lemon juice

1/2 cup grated parmesan cheese

1 bag of spinach

1 package Luke’s lobster with seasoning packet (I only used 1 teaspoon)

Salt and pepper, to taste

STEPS TO MAKE IT—

In a large pot, sauté sliced garlic cloves in olive oil over medium-high heat. Add the rinsed dry Arborio rice and saute for 2-3 minutes until it is lightly toasted. Reduce the heat to medium and pour in the water or broth. Cover and simmer for 15 minutes, stirring occasionally. Then add in the lemon juice, parmesan cheese, and seasonings. Add in spinach and cover for an extra 5 minutes to wilt. Cut lobster into small chunks and toss into the pot, mixing until well combined. Serve with additional grated parmesan cheese and enjoy! 🍽️
