These high protein pancakes are sooo good & can be made as a meal prep!
Cottage Cheese Pancakes 🥞
3 servings (about 4 pancakes per serving)
386 calories & 19 grams of protein per serving
Ingredients:
1 cup of pancake mix (I used Birch Benders brand)
1 cup of low fat cottage cheese
2 large eggs
1/4 cup of water
1/8 cup of avocado oil (can sub for water)
1 tsp of vanilla bean paste (can sub for extract)
1.5 tbsp of maple syrup
1 tsp of baking powder
Mix all the ingredients together. Lightly spray pan with avocado oil. I used the 1/4 cup to portion the pancake mix out.
Cook on medium heat till you see bubbles then flip!
Top with any fruit or nut!! I topped with blueberries, blueberry jam, pumpkin seeds, butter & maple syrup 🫐🥞🫶
Just fyi I did not include the macros for toppings in my count as I assume everyone will add their own. If you are trying to keep your carbs and fat low I recommend just topping with any berries!!
