Ingredients:
1 lb large shrimp, peeled and deveined (tails on or off)
4 tbsp unsalted butter
4 cloves garlic, minced
1/2 cup dry white wine (or chicken broth)
1/4 cup fresh lemon juice
1/4 tsp crushed red pepper flakes (optional for spice)
1/2 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
Salt and pepper to taste
1/2 tsp Italian seasoning
1 tbsp olive oil
Cooked pasta or crusty bread (for serving)
Instructions:
Sauté the Shrimp:
In a large skillet, heat 1 tbsp olive oil and 2 tbsp butter over medium-high heat. Add the shrimp in a single layer and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes per side, until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.
Cook the Garlic:
In the same skillet, add the remaining 2 tbsp of butter and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
Deglaze the Pan:
Pour in the white wine (or chicken broth) and lemon juice, stirring to scrape up any browned bits from the bottom of the skillet. Let the sauce simmer for 2-3 minutes to reduce slightly.
Return the Shrimp:
Add the cooked shrimp back to the skillet, tossing them in the garlic butter sauce. Stir in the Parmesan cheese and red pepper flakes (if using). Cook for another 1-2 minutes to heat everything through.
Serve:
Garnish with fresh parsley and serve immediately over cooked pasta or with crusty bread for dipping.
Helpful Tips:
Creamy Option: Add a splash of heavy cream to the sauce for a richer, creamier scampi.
No Wine: Substitute chicken broth for white wine if you prefer.
