Ingredients
2 medium zucchinis, grated
2 medium potatoes, grated
1 small onion, finely chopped
2 garlic cloves, minced
½ cup all-purpose flour
½ cup grated Parmesan cheese
2 large eggs, beaten
1 tsp baking powder
Salt & pepper, to taste
¼ cup vegetable oil
Garnish: Sour cream & chopped chives
Directions
Preheat oven to 375°F (190°C). Prep a 12-cup muffin tin.
Squeeze excess moisture from grated veggies.
Mix zucchini, potatoes, onion, garlic, flour, Parmesan, baking powder, and eggs in a bowl.
Stir in oil until fully combined.
Spoon into muffin cups, filling ¾ full.
Bake 20-25 mins until golden.
Cool, garnish, and serve warm with sour cream & chives!
