elote in a bowl 🌽✨

my latest obsession; it’s just too good! i love elote, and this recipe is perfect to eat alone or with chips!

recipe:

• corn: i used a can of corn this time around, but you can use whatever kind you prefer (frozen, cut off the cob, etc)

• mayo: i used light, but that’s just what i had!

• cojita cheese: this is a non-negotiable for this recipe. i just wouldn’t be the same without it!

• tajin: again, a non negotiable

start off by preparing your corn per usual. i also added a pad of butter to mine before adding the rest of the ingredients.

once your corn has cooled, add your mayo. you want enough to cover your corn so that the rest can stick. i also like a little extra in mine.

after your mayo, do the same with the cojita cheese. enough to cover the corn, but you can always add more.

finally, top with tajin! how much you add is up to you!
