Mediterranean Pasta Salad

It’s almost spring and that means lots of pasta salads in this house! 🫒 This is one of my absolute faves and easy as pie.

🥒 Ingredients:

• cucumber

• tomato

• olives of your choice

• green onion

• fresh parsley and/or oregano

• lots of feta!

• extra virgin olive oil

• red wine vinegar

• salt & pepper

• chicken or chickpeas optional for protein!

🔪 Directions:

• chop your veggies and herbs

• boil pasta

• mix together with EVOO, red wine vinegar, salt, pepper, and feta

• chill and enjoy!
