I'm really new to cooking but i've made this recipe more than 5 times now & I do think it's quite yummy! I don't really like to measure my ingredients, I just eyeball it to my liking!

Ingredients used for 1 serving:

• Enoki Mushroom

• Kimchi

• Silken tofu

• Gochujang 1/2 tbsp

• Ikan bilis stock cube 1/2

• Chicken fillet (I've used pork before too) 150g

• Light soy sauce/Fish sauce 1 tbsp

*If you have garlic/onion on hand it'll be a bonus!

Instructions:

1. Stir fry garlic/onion (if have) with Kimchi

2. Add meat of choice and continue stir frying

3. Add water, wait for it to come to a boil then add the stock cube

4. Add half a tablespoon of Gochujang (I can't take spice well), and a tablespoon of soy sauce

5. Boil for 5-10 minutes

6. Add Enoki mushroom

7. Add Tofu or egg when its ready to serve!

*I dont add any salt, but you can if you want!

After making this multiple times, the most important step is definitely stir frying the kimchi first. It really makes it more flavourful as compared to just boiling the kimchi in the soup. Try to use anchovy stock/stock cubes instead of just water because it makes a huge difference! I also try not to use too much Gochujang because I find that it overpowers the kimchi taste & just becomes bland-spicy. I would've added in Gochugaru but I don't have it :(

You can pair this with a bowl of rice or add in noodles :) It's a really simple recipe, I make this at least once a week HAHA do let me know if there are any improvements I can make to this dish 😋😋
