This pumpkin baked oatmeal is the perfect fall breakfast and it’s SO easy to make!
1 1/2 cups rolled oats
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1/2 cup pumpkin purée
1 1/2 cups unsweetened almond milk
1 egg
1/4 cup maple syrup
Instructions:
Preheat oven to 350°F (175°C).
Spray an 8×8 baking dish with nonstick spray.
In a large bowl, combine the rolled oats, baking powder, pumpkin pie spice, and salt.
Add the pumpkin purée, almond milk, maple syrup, and egg to the oat mixture. Whisk until the egg is fully incorporated and the mixture is well combined.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake for 30-35 minutes until the mixture is set and the top is golden.
Remove from the oven and allow it to cool slightly before serving.
Top with almond butter or vanilla yogurt if desired.
