Hi girlies, today Iβm sharing my super easy quick simple and fast pumpkin soup recipe! Trust me, you can make a big bowl of delicious π soup in 30 minutes for less than RM10!
π₯ INGREDIENTS π§
- pumpkin
- mirepoix, not more than pumpkin (onions + carrots + celery)
- chicken stock (kiub pati) OR mushroom soup stock for vegetarian option
- cooking cream OR cream cheese OR milk + butter
π² HOW TO (see image 3) π²
1οΈβ£ choose a small pumpkin, cut into cubes
2οΈβ£ mix pumpkin cubes thoroughly with oil, salt, pepper
3οΈβ£ bake/air fry at 180c for 18 minutes. If you donβt have oven, can pan fry as well but need to stir often until soft and starts to brown
4οΈβ£ in a pot, cook the mirepoix (chopped onion + carrot + celery) in oil or butter until soft. Then add the cooked pumpkin
5οΈβ£ add water (donβt pass the height of ingredients), seasoning, and cooking cream. Let simmer for 5-10 minutes, stir occasionally
6οΈβ£ blend it with immersion blender, upright blender, or (manual labour) potato masher. β οΈ CAREFUL AS THE SOUP IS VERY VERY VERY VERY HOT β οΈ
π TADA!!! your homecooked pumpkin soup is ready!!! β¨ππ₯£ just top with any garnish you like (I added cheese). I love this soup with bread!
